- 4 chicken breasts
- cajun spice mix
- 700g lettuce mix
- 2 mangoes, sliced
- 2 avocados, diced
- 2 green shallots, sliced
- 1 bottle french dressing
- Coat chicken breast with cajun spices and BBQ till cooked through.
- Toss lettuce, mango, avocado and shallots.
- Dress with french dressing and slice the breast chunky and lay over salad.
