1 ¼ cups almond meal
1 cup plain flour
½ teaspoon baking powder
1¼ cups icing sugar
150g melted butter
- Preheat oven to 180C.
- In a large bowl sift together 1 ¼ cups almond meal, 1 cup plain flour, ½ teaspoon baking powder and 1¼ cups icing sugar. Add 150g melted butter and mix until combined.
- Lightly whisk five egg white until frothy then fold through the almond meal mixture along with the chopped flesh of one mango.
- Spoon into the holes of a lightly greased friand tray then bake for 25-30 minutes or until golden and cooked through. Cool and serve.
Dust with icing sugar if desired.
