1 Mango 1 ¼ cups almond meal 1 cup plain flour ½ teaspoon baking powder 1¼ cups icing sugar 150g melted butter


  1. Preheat oven to 180C.
  2. In a large bowl sift together 1 ¼ cups almond meal, 1 cup plain flour, ½ teaspoon baking powder and 1¼ cups icing sugar. Add 150g melted butter and mix until combined.
  3. Lightly whisk five egg white until frothy then fold through the almond meal mixture along with the chopped flesh of one mango.
  4. Spoon into the holes of a lightly greased friand tray then bake for 25-30 minutes or until golden and cooked through. Cool and serve.
Dust with icing sugar if desired.
