Mango-and-Cherry-Tomato-Tart-with-Goats-Cheese-and-Basil

Ingredients

  • 2 mangoes
  • 1 punnet cherry tomatoes
  • 200g soft goats cheese (deli or supermarkets)
  • 1 bunch basil
  • 2 sheets of puff pastry
  • 2 tbs olive oil
  • salt and pepper

Method

  1. Cut puff pastry sheets into 4 even squares and bake them at 180 degrees until golden.
  2. Meanwhile slice mango and ½ cherry tomatoes and pick basil, mix together in a bowl, season and add olive oil.
  3. Once the pastry has cooled slightly push them in the middle and add the mango mix, crumble goats cheese over and serve.
