- 2 mangoes
- 1 punnet cherry tomatoes
- 200g soft goats cheese (deli or supermarkets)
- 1 bunch basil
- 2 sheets of puff pastry
- 2 tbs olive oil
- salt and pepper
- Cut puff pastry sheets into 4 even squares and bake them at 180 degrees until golden.
- Meanwhile slice mango and ½ cherry tomatoes and pick basil, mix together in a bowl, season and add olive oil.
- Once the pastry has cooled slightly push them in the middle and add the mango mix, crumble goats cheese over and serve.
